#1 MILD BRICK  Widmer's Cheese Cellars, Theresa

Semi-firm, buttery, sweet Wisconsin Original hand-crafted by third-generation Master Cheesemaker Joe Widmer.

 

#2 BESSIE'S BLEND  Carr Valley Cheese, La Valle

Cow and goat milk combine in Master Cheesemaker Sid Cook's nutty, buttery creation.

Aged four months. Firm yet creamy texture.

 

#3 ENGLISH HOLLOW CHEDDAR  Maple Leaf Cheese, Monroe

2008 World Champion by Master Cheesemaker Jeff Wideman. All natural, shelf cured, aged 12 months.

Complex, slightly sweet Cheddar flavor.

 

  #4 BENEDICTINE  Carr Valley Cheese, LaValle

Sid Cook's mixed-milk (cow/sheep/goat), washed-rind Monastery-style specialty. Cellar cured, hand rubbed for 12 weeks.

Bold, earthy flavor profile.

 

#5 MINDORO GORGONZOLA  Swiss Valley Farms, Mindoro

Creamy and milder than many blues, this Danish-style Gorgonzola is soft, peppery and piquant with

light greenish-blue veining. Made with fresh, sweet Wisconsin milk.
